Breakfast
Steven Hyde asked:

On weekends I usually have a breakfast made of those three items (usually cold because I am a horrible cook) and I want to know what I could make with any kind of good cheese, any good sausage, and regular chicken eggs.
You can add any veggies to the recipe if you cook it that way.
Oh, and I forgot to add potatoes, they’re my favorite veggie, but so far all of these have been so good I can’t make a decision; I do know what I’m having for Breakfast tomorrow though!

Try this recipe for a FRATATA

It is similar to an omelet…but done under a broiler in the end. You would have to cook the sausage ahead before adding it. I would add a little bit of green and/or red peppers and onion maybe too (for color).

Couple a thoughts…
You could make a baked dish with these ingredients, kind of like a baked omelet. I’ve made these with all kinds of veggies such as brocolli, onions, tomatoes, zuchinni, etc. Try more than one kind of cheese in it too. (makes a good vegetarian main dish without the meat as well.)

Or if you want to add bread of some kind you could make a killer breakfast sandwich. Add tomatoes or onions… yum.

Or even one of those breakfast casseroles where you put all this stuff over cubed bread and bake.

A breakfast bowl. I like to add frozen potatoes (country style) because its a great addition real potatoes take too long to prepare. It’s easy to make taste great. I cook the potatoes first in some oil while I’m cooking the chopped sausage in a separate pan. When the potatoes are mostly brown and crispy, I add the eggs. You mix well and add the sausage, pour some shredded cheese on top and voila; breakfast is served. Also, you can buy those cooked but frozen sausages and just heat ‘em up in the microwave. My husband loves when I make this and usually drowns it in ketchup, cuz he puts ketchup on everything.

Make and Freeze Breakfast Sandwiches
1 (16 1/3 oz) can buttermilk biscuits
5 eggs
1/2 lb ground sausage
4 slices sharp cheddar
butter
pepper, to taste
dry mustard, to taste
garlic salt, to taste
–Bake biscuits according to package directions. While biscuits are baking, cook the sausage in skillet. Beat the eggs in a bowl with desired amount of pepper and dry mustard. Add the beaten eggs to the cooked sausage and continue to cook until eggs are done. Separate biscuits into halves and butter the inside of each half lightly and sprinkle with desired amount of garlic salt. Top one half of each biscuit with 1/4 slice of cheese, some of the egg-sausage combo, and then another 1/4 slice of cheddar. Top with other half of biscuit. Wrap each sandwich with wax paper to freeze and place in freezer bag. To reheat, microwave sandwich for 1-1 1/2 minutes while still in waxed paper.

You could also make a quiche (my favorite!)…

This is something else I really like! I’m not a big fan of ham so sausage is a good substitute. The swiss cheese is also great in this! Hoppel Poppel–

There’s nothing like eggs for breakfast!
Try these……

Scrambled Eggs and Potatoes:
~~~~~~~~~~~~~~~~~~~~~~~~
4 eggs
2 medium potatoes
2 tablespoons pure olive oil (not extra virgin)
salt and pepper to taste
Wash potatoes and then carefully peel them. Next rinse the potatoes. Cut into 2 inch long strips (like French fries).
Then heat oil in fry pan and fry potatoes until golden brown. Crack eggs in a bowl (make sure there is no egg shell). Scramble eggs and pour into fry pan. Use a spatula to continue scrambling eggs in fry pan mixing them in with the potatoes until well cooked.
Add a dash or two of salt and pepper at the end. Serve while hot on a large plate or platter. Add some ketchup if you like. This is so easy to make and tastes delicious.
OR
Breakfast Mess:
~~~~~~~~~~~~~
4-5 large baking potatoes
1 pound ground sausage
10-12 eggs
1 green bell pepper (diced)
Salt
Pepper
Tortillas (optional)
Salsa (optional)

Cut potatoes into small chunks and boil in water until soft enough to piercewith fork. Drain.

Brown sausage in a large skillet with diced green bell peppers until sausage iscompletely browned. Add potatoes to skillet and cook until potatoes arestarting to brown a little.

Break eggs into large bowl and whisk. Pour into skillet with sausage andpotatoes. Stir until eggs are no longer wet (like scrambled eggs).

Serve piping hot. Can be wrapped in tortillas with salsa.

Country Breakfast Casserole

INGREDIENTS

1 chopped green onion
3 cups shredded Cheddar cheese
6 eggs, lightly beaten
1 cup water
1/2 cup heavy cream
1 (2.64 ounce) package country gravy mix
6 slices bread, cut into 1 inch cubes
4 tablespoons melted butter
paprika to taste (optional)

DIRECTIONS
Preheat oven to 325 degrees F (165 degrees C). Grease an 11×8 inch baking dish.
Brown sausage in a large skillet; drain fat.
Combine sausage with green onion and spread evenly across the bottom of the baking dish. Top with shredded cheese. Whisk together eggs, water, cream, and gravy mix; add mixture to baking dish. Arrange bread squares evenly on top. If desired, drizzle melted butter over bread, and sprinkle with paprika.
Bake 40 minutes in the preheated oven, or until a knife inserted into the center comes out clean. Set aside 10 minutes before serving
